To add further info, if I delete the "menus" on Joomla and recreate them, it solves the issue.

I did this for a subsequent website I created after this one in question now. I then returned to this site and checked it and hoped URL rewrite was already enabled but it wasn't. My PRO Advice moving forward is to always enabled URL rewrite straight away on a Joomla install going up and then that would solve this issue moving forward.

So anyway I've enabled URL Rewrite and got the same result again. Unfortunately redoing the menus will be a bit of a pain as there's quite a few of them and I built this site while learning so not everything is targeted how it should be, maybe via classes etc, they are using ID's, classes, all over the place, some of them. So after rebuilding the menu's I'd also have to add classes for them as I go or place the ID's back (don't shoot me I was learning!). Either way it's gonna be a fair chunk of work so I was hoping to find out what configuration error it is I keep doing that results in this. All I do is follow basic instructions to get a Joomla installation up with no modifications.

Would love to know what the solution is in the end and post it for some Joomla follower to hopefully hit on Google one day.
